RECIPE: BREAKFAST CASSEROLE
In order to make the casserole that appeared in my Instagram stories,

- A large Casserole dish 
- Spray olive oil 
- Bag or box of spinach and arugula mix 
- Turkey Sausage: Eckrich, Butterball, or whatever you like. 
- 2% low fat shredded sharp cheddar, or Mexican blend cheese (6-8 OZ) 
- Large carton of egg whites 
This rest is easy because you use basically all of the ingredients in the recipe. The only package that I portion out is the cheese. I prefer to use only 6 or 7 OZ.
- Set the oven to 425. 
- Spray the dish with the oil. 
- Hand-tear the spinach and arugula to make it fit the pan. I destroy mine. 
- cut up all of the sausage and line it up evenly over the spinach and arugula. 
- Top it with the amount of cheese that you want. I almost always use 6oz. 
- Pour all of the egg whites over the ingredients. 
- Bake for 20-30 minutes depending on your oven. 
- Once it cools cut it into 6 even servings and you have breakfast every morning for 6 days. 
My boyfriend and I each make one at the same time and cook them together, you could probably fit 4 casseroles in the oven at once if you have a large family. You may need to turn them and cook them longer if you make more than 2 at a time.
